Little Millet Upma:

Ingredients:

1 cup little millet

1 onion, chopped

1 tomato, chopped

2 green chilies, chopped

1/2 tsp mustard seeds

1/2 tsp cumin seeds

1/4 tsp turmeric powder

Salt to taste

1 tbsp oil

Water as required

Instructions:

  • Rinse little millet in water and soak for 15-20 minutes.
  • Heat oil in a pan, add mustard seeds and cumin seeds. Once they start to splutter, add onions and green chilies and sauté for a minute.
  • Add tomatoes, turmeric powder, and salt. Cook until tomatoes turn soft.
  • Drain the soaked little millet and add it to the pan. Mix well and add water as required. Cover and cook for 10-12 minutes until the little millet is cooked through. Serve hot.


Little Millet Pongal:

Ingredients:

1 cup little millet

1/2 cup moong dal

1 tomato, chopped

2 green chilies, chopped

1/2 tsp cumin seeds

1/4 tsp turmeric powder

Salt to taste

1 tbsp ghee

1 tbsp chopped coriander leaves

Instructions:

  • Rinse little millet and moong dal in water and soak for 30 minutes.
  • Heat ghee in a pressure cooker, add cumin seeds, and let them splutter.
  • Add onions, green chilies, and sauté for 2-3 minutes until onions turn translucent.
  • Add tomatoes, turmeric powder, and salt. Cook until tomatoes turn soft.
  • Drain the soaked little millet and moong dal and add them to the pressure cooker. Mix well and add 2 cups of water.
  • Pressure cook for 3-4 whistles or until the little millet and moong dal are cooked through.
  • Garnish with chopped coriander leaves and serve hot.


Little Millet Salad:

Ingredients:

1 cup little millet, cooked

1 cucumber, chopped

1 carrot, grated

1 onion, chopped

1 tomato, chopped

1/2 cup chopped coriander leaves

1/4 cup lemon juice

Salt to taste

1 tbsp olive oil

Instructions:

  • In a large mixing bowl, add cooked little millet, cucumber, carrot, onion, tomato, and coriander leaves. Mix well.
  • In a small bowl, mix lemon juice, olive oil, and salt.
  • Add the dressing to the salad and mix well.
  • Serve chilled.
Little Millet Cutlets:

Ingredients:

1 cup little millet, cooked
1 large potato, boiled and mashed
1/2 cup mixed vegetables (carrots, peas, corn), boiled and mashed
1/2 cup breadcrumbs
1/4 cup finely chopped onion
2 cloves garlic, minced
1/2 inch ginger, minced
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp red chili powder
Salt to taste
Oil for frying

Instructions:
  • In a large mixing bowl, combine the cooked little millet, mashed potato, and mashed vegetables.
  • Add breadcrumbs, onion, garlic, ginger, cumin powder, coriander powder, garam masala, red chili powder, and salt to taste. Mix well until all the ingredients are combined.
  • Divide the mixture into small portions and shape each portion into a small cutlet.
  • Heat oil in a frying pan over medium heat.
  • Once the oil is hot, add the cutlets in batches and fry until they turn golden brown on both sides.
  • Remove the cutlets from the pan and place them on a paper towel to remove any excess oil.
  • Serve the little millet cutlets hot with your favorite dipping sauce.

Little Millet Biryani:

Ingredients:

1 cup little millet, soaked for 30 minutes

2 cups water

1 large onion, thinly sliced

1 large tomato, chopped

1/2 cup mixed vegetables (carrots, peas, beans), chopped

1/4 cup mint leaves, chopped

1/4 cup cilantro leaves, chopped

1 tbsp ginger-garlic paste

1 tsp cumin seeds

1 tsp coriander powder

1 tsp garam masala

1/2 tsp red chili powder

1/4 tsp turmeric powder

Salt to taste

2 tbsp oil

Cashews and raisins for garnish

Instructions:

  1. In a large pot, bring the water to a boil and add the soaked little millet. Cook for 10-15 minutes until the millet is tender but still holds its shape. Drain any excess water and set aside.
  2. In a separate pan, heat oil over medium heat and add the cumin seeds.
  3. Once the cumin seeds start to splutter, add the sliced onions and sauté until they turn golden brown.
  4. Add the ginger-garlic paste and sauté for 1-2 minutes.
  5. Add the chopped tomatoes and cook until they turn soft and mushy.
  6. Add the chopped vegetables, coriander powder, garam masala, red chili powder, turmeric powder, and salt. Mix well and cook until the vegetables are tender.
  7. Add the cooked little millet to the pan and mix well with the vegetables.
  8. Add the chopped mint leaves and cilantro leaves and mix well.
  9. Cover the pan with a lid and simmer for 5-10 minutes until all the flavors are well combined.
  10. Garnish with cashews and raisins and serve hot.
